Summer salad

This is a really tasty salad, using seasonal produce of strawberries, tomatoes and asparagus.

Strawberry, tomato, avocado and asparagus salad

Serves: 4 people Prep time: 20 mins


Ingredients:

250g Irish strawberries, cut in quarters

250g Irish cherry tomatoes , cut in half

250g Irish asparagus, cut into 3-4cm pieces

1 avocado, cut into cubes

200g baby mozzarella

1 tbsp blackberry balsamic vinegar

handful basil leaves, chopped

Pepper and salt

Optional ( 2 cups cooked quinoa)


Method:

1. Put the asparagus pieces into boiling salted water for 30 seconds, strain and rinse in cold water to stop them cooking, drain and place in a bowl.

2. Mix the strawberries, cherry tomatoes, avocado and mozzarella with the asparagus and season with pepper and salt.

3. Just before you serve, Drizzle the balsamic vinegar over the salad and enjoy!


    Variations : One good variation is to add cooked quinoa to the salad, however I think it tastes nicer without it!

    Serving suggestions : Serve immediately as a side to a bbq or a summer protein dish.

    Storage: Best eaten fresh.
