Tabouleh - a simple salad with lots of variations. It is based on chopped fresh herbs & cooked bulgar wheat.

This is how I cook the bulgar wheat.

1. 2 parts water to 1 part bulgar (eg 4 cups water & 2 cups bulgar)
2. Summer in a saucepan on the stove until almost all the water is absorbed (approx 10mins)
3. Remove from heat & leave to stand for 5 mins with lid on.
4. Fluff up with a fork
5. Once cool add all other ingredients

E.g
👩‍🍳chopped fresh parsley, mint & coriander
👩‍🍳 halved cherry tomatoes
👩‍🍳 chopped red onion
👩‍🍳 lemon zest & juice
👩‍🍳 extra virgin olive oil
👩‍🍳pepper & salt
⭐️ top with microgreens
