Broccoli Soup - zero waste

Check out this simple, quick and tasty broccoli soup, using stalk & crown.

TOP TIP

First of all I suggest you use my tip of sauted onions and garlic and have these ready in the freezer!

When you have time, saute lots of onions and garlic together. You can either use an oil of your choice or saute in water for a healthier option. Here is my video on how to chop and onion easily into small pieces.

Then simply put the onion and garlic mixture into silicon muffin trays and freeze. Once frozen, place in a freezer container ready to add to any soup or stew and save you time on busy days!

I made this soup using the smart blender.

You can use a saucepan and blend to consistency, if you don't have the blender

Ingredients

1 Large head of Broccoli - stalk chopped into small pieces and florets broken up
1 portion of frozen onion and garlic (or 2 onions chopped and 2 cloves garlic sauted)
500ml Veggie stock
Pepper and salt
Blue cheese and walnuts to garnish



Method:


1. Place all ingredients in a saucepan
2. Bring to boil and simmer for 15 mins.
3. Blend and serve.
4. Top with blue cheese and walnuts if you wish
