Crunchy Granola
This delicious and nutritious dish is a staple in our house
This is delicious! Full of low gi foods, like oats, quinoa & buckwheat with a touch of honey and coconut oil. It is very easy to make and the whole family loves it. Sometimes we have it for dessert with fruit and natural yoghurt, other times we have it for breakfast or an after school snack. It is a great source of low gi carbs and minerals. INGREDIENTS
200g Oat flakes
100g buckwheat
100g quinoa flakes
50g ground/chopped nuts
50g sunflower seeds
50g pumpkin seeds
50g desiccated coconut
1 tbsp cinnamon
120g-coconut oil
90g honey
METHOD
- Preheat oven to 140°C.
- Mix all dry ingredients together.
- Melt coconut oil, add in honey.
- Pour wet mixture onto dry mixture and stir well.
- Lay the mixture out on two lined baking trays, in a single layer.
- Bake for one hour.
- Allow the granola to cool, then store in an airtight container.
Variations: You can use oats only if you do not have buckwheat or quinoa flakes, you can add dried fruit either.
Serving suggestions: Serve in a bowl, as a snack or for breakfast with fresh fruit and a dollop of natural live yoghurt. Ideal in a lunchbox.
Storage: When stored in an airtight container it will last for up to 4 weeks.
