A great way to get more fish into your diet

The Serves 6

Ingredients
800g fish (salmon & cod)
2tbsp red curry paste
4 cloves garlic, crushed
2 thumb pieces of ginger, grated
2 tbsp fish sauce
2 eggs
6 spring onions, chopped
1 red chilli, chopped
150g green beans, chopped
1 lime, zest and juice
olive oil to fry

Method:
1. Blitz fish so that it is coarsely chopped in food processor
2. Add all other ingredients
3. Take golf ball size pieces and form into patties.
4. Shallow fry in a little olive oil, approx 2 mins each side.
5. Enjoy with salad and sweet chilli sauce to dip.
